What it is

A savoury ball named after 蟳 (mud crab), made in-house by old-style Taiwanese restaurants. It is one of the items on a 香腸熟肉 platter, the southern spread of house-made sausage, shrimp rolls, mullet roe, pork tongue and fen chang that Mirror Media compares to the north's 黑白切.

How it is made

Restaurants make them to their own recipes. At Hsin Hsin in Tainan the crab balls follow a family recipe passed down in the kitchen.

How to eat it

Order a 香腸熟肉 platter and let the restaurant put it together for the size of your group, or order the crab balls on their own.

In Tainan

Hsin Hsin, one of Tainan's three classic Taiwanese restaurants alongside A-Hsia and A-Mei, always keeps its 粉腸蟳丸 on the menu.
