What it is

A thickened soup with slices of boneless duck, shredded bamboo shoots and garlic. One writer describes it as tasting cleanly of duck and a little sweet, with crunchy bamboo against tender meat.

Where it comes from

The Michelin Guide calls duck thick soup a speciality of Xingang in Chiayi County. Yeh San's owner ran a duck soup shop in Xingang before bringing the recipe to Tainan in 2021.

How it is made

The duck is stir-fried in a small pot with garlic and bamboo shoots for wok aroma, then served in the thickened soup.

How to eat it

Have it on its own, over rice noodles, or with a bowl of duck rice. Add vinegar or chilli powder to taste.
