What it is

Packet instant noodles turned into a cheap, filling snack-shop dish: stir-fried with plenty of extra ingredients and served with an egg.

How it is made

At Pao Ko Oden in Tainan the noodles are Uni-President's braised-pork flavour, first cooked in a pork rib and radish broth and then stir-fried with toppings. A half-cooked egg with a runny yolk goes on top.

How to eat it

Get a few pieces of oden on the side. Break the egg and mix it through.

In Tainan

Pao Ko's owner turned to frying noodles after a fire destroyed his printing works, and the noodles are now the shop's most popular dish.
