What it is

Fruit shops and old-style ice parlours (冰菓室) serve plates of cut fruit, juices and smoothies blended to order, and milk ice topped with whatever is in season. Common blends include papaya, mango and watermelon.

Where it comes from

Lily Fruit Shop (莉莉水果店) in Tainan traces its roots to a founder who sold fruit and vegetables at the South Gate market under Japanese rule. The shop is named after his eldest daughter, whom American servicemen called Lily. The family says a US-made blender she bought through her work made the shop an early seller of fresh juice.

How it is made

Juice is blended to order. Ice shops pile fresh fruit, syrups or condensed milk onto shaved ice or milk ice.

How to eat it

Follow the season: mango in summer, and strawberries from about November to April at places like Nan Chuan in Anping, which adds pudding and condensed milk. Tai Cheng on Zhengxing Street switches to cantaloupe ice in winter.
