What it is

A home-style vegetable dish in which leafy greens are cooked together with three eggs: fresh egg, salted egg and century (thousand-year) egg. The salted egg brings salt and richness, and the century egg a deep savoury note.

How it is made

Century eggs are cured in an alkaline mix until the white turns into a dark, translucent jelly and the yolk goes creamy and grey-green. Salted duck eggs are soaked in brine or packed in salted charcoal paste, which gives a firm orange yolk. Both are cooked into the greens with a fresh egg.

How to eat it

This is the vegetable plate in a shared meal of several dishes. Have it with rice.

In Tainan

Michelin's inspectors, writing about Eat to Fat in Tainan, say the dish looks plain but tastes layered. The depth comes from the trio of fresh, salted and thousand-year egg.
