What it is

A savoury cake of rice milk and sweet potato starch, steamed, sliced and pan-fried until golden. It comes with bamboo-shoot pork sauce and often an over-easy egg.

How it is made

At A Wen in Tainan, a batter of rice milk and three kinds of sweet potato starch is steamed into a cake, then sliced and fried.

How to eat it

Snack food. Get the house version with bamboo-shoot pork sauce and a fried egg, and try the house-made chilli sauce.

In Tainan

A Wen opened in 2016 on a street of century-old shops and quickly built a following for its scratch-made cake.
