What it is

A soft milk ice, similar in texture to snow ice, topped with dense, sweet red beans and a raw egg yolk in the centre.

Where it comes from

Yin Feng Ice Parlor in Yanshui has served it for more than 60 years. Local talk says the shop was once where Yanshui couples met on matchmaking dates, which earned it a matchmaker reputation. TVBS reports this as hearsay.

How it is made

A milk-based ice is shaved fine, then topped with red bean and a raw egg yolk.

How to eat it

Stir the yolk into the ice before you start. It makes the texture smoother.

In Tainan

Yin Feng, now run by the third generation, stands next to Yanshui's historic Ye family octagonal house (八角樓).
