How it is made

Salted duck eggs are made by soaking duck eggs in brine or packing them in damp, salted charcoal. The cooked yolk is then used to flavour other foods, here the squid.

How to eat it

The rich salted egg flavour is what makes it a rice dish, so share the plate and get a bowl of rice.

In Tainan

The canteen sits beside the owner's fish farm in Cigu, where black-faced spoonbills feed from about September to May, and its menu leans on seafood raised locally.
