How it is made

Sesame oil chicken, the best-documented dish in this family, starts by frying old ginger in sesame oil before rice wine and water go in. Rice wine does not fully cook off, so dishes made this way can still contain some alcohol.

How to eat it

Order it next to Jin Fu's stir-fried eel. Traditional Chinese medicine counts sesame oil dishes as warming, so they are not advised if you have a cold or inflammation.

In Tainan

Jin Fu, open since 1972 on Fuqian Road, names its three treasures as stir-fried eel, sesame oil pork kidney and live fish.
