What it is

Small squid cooked in a clear broth with an intense flavour, a faint pepperiness and a sweet finish, over thick rice noodles. Squid roe is sometimes available.

Where it comes from

Yeh Jia in Tainan, founded in 1935, says it invented calamari rice-noodle soup. It is now run by the third generation.

How it is made

The squid is cooked in the clear broth and served over thick rice noodles. Yeh Jia makes its noodles with brown rice, which gives a fragrant aroma and firm texture, and sources its squid from Indonesian waters.

How to eat it

Think breakfast or lunch. Yeh Jia opens in the morning and closes mid-afternoon, and holidays bring queues.
