A large fish head and mixed seafood simmered with salted young watermelon, which gives the broth a light sourness.
In Tainan
Tucheng Seafood (土城海產店), near the Orthodox Luermen Matsu Temple in Annan District, is known for its crabs and also serves a fish-head soup with salted watermelon. The fish is mostly head and very gelatinous.
