Plain Xuejia shop that has served beef soup for nearly three decades. Same-day beef comes from the Shanhua meat market, and the broth of bones and tendons simmers for up to eight hours.
Outside the city, so it isn't included in the day planner. Plan on a train, bus or taxi.

Brisket and chuck, cooked by pouring the hot clear broth over them.

Fresh beef folded through loosely set egg. Regulars also order tendon stir-fried with cabbage.
